Introduction to Food Additives

Food additives are natural or synthetic chemicals intentionally added to food by food processors to enhance the properties of the food, such as physical, nutritional, and processed qualities.
Currently, more than 2500 substances use for this purpose, including acidifiers, anti-caking agents, colorants, nutraceuticals, emulsifiers, flavoring agents, flavor enhancers, preservatives, complexing agents, stabilizers, and thickeners.

From ancient times, their presence has been evident. They are a staple for imparting artificial flavors and improving the quality of foods and beverages. Moreover, the earliest historical record of adding additives to food comes from ancient Egyptian papyrus from around 1500 BC.

Types of Food Additives

Here are some common types of food additives, these include;

pH Controlling agents

Ingredients that maintain or control the acidity or alkalinity of foods now recognize as pH adjusters. These agents can add to modify the texture, taste, or food safety. Citric acid, acetic acid, and sodium citrate are common active ingredients in gelatin, jams, ice cream, and candies. Lactic acid is an acidity regulator in cheese making and adipic acid in bottled fruit-flavored beverages.

Leavening agents

Raising agents incorporate into doughs and batters to improve baked goods’ volume, shape, and texture. Common leavening agents include baking powder, beer, buttermilk, yeast, whey protein concentrate, and yogurt. These leavening agents now use in various sweet and savory products in cakes, cookies, bread, crackers, scones, muffins, and soda bread.

Emulsifiers

Emulsifiers add to oil- and water-based mixtures to help them mix. Examples of emulsions in everyday foods are vinaigrette dressings, milk, and mayonnaise. Egg yolk and soybean-derived lecithins commonly use emulsifiers in the food supply. Others include monoglyceride diacetyltartarate (DATEM) and sodium stearyl lactylate. They operate in commercial bread dough, artificial whipped cream, and dry, liquid, or frozen egg whites.

Stabilizers, Thickening & gelling agents

These operate in many food categories to improve stability and create a uniform texture by preventing emulsion separation, ice crystal formation, and ingredient settling. Starch-based thickener categories include arrowroot, corn, potato, and tapioca. Vegetable gums include guar gum, locust bean gum, and xanthan gum. Common protein-based thickeners are collagen, egg white, and gelatin. Alginic acid, alginate (sodium, potassium, calcium), agar, and carrageenan are polysaccharides derived from algae and seaweed, and pectin is a polysaccharide derived from apples and citrus fruits. It is a polysaccharide.

Preservatives

Used to prevent or inhibit microbial spoilage of food. Sodium benzoate, potassium sorbate, sulfur dioxide, and lactic acid are used in food processing, such as jams and preserves. Food additives used in meat additives are the most common, such as bacon, fishham, and sausage.

Antioxidants

They are similar to preservatives and can extend food’s shelf life by inhibiting food breakdown by oxygen. The most widely used antioxidant is vitamin C.

Coloring agents

Phosphates contain naturally occurring phosphorus, an essential mineral for bone development, and are used to enrich and acidify bread and baked goods.
